I love Mexican food and this book has so many recipes that satisfy my cravings for spicy food without the saturated fat of my usual recipes. I've made a number of these dishes and I'm just amazed every time at how flavorful they turn out. My favorite discovery was the Taco Soup (so easy and tasty!) and I find I have to double the recipe if I want any leftover to freeze.
